The first cup of tea is called dried rice cake tea. This is usually prepared for honourable guests, or new guests seen for the first time, or visiting relatives. However this is a tea without tealeaves just dried rice cake and sugar with boiled water. It is very convenient to drink; however, it is quite complicated to make dried rice cakes. Therefore, this tea shows extra hospitality.
The second cup of tea is called the tea of smoked beans. The main materials are smoked beans and tealeaves, together with fried sesame seeds, dried carrot sticks, orange peels, and fresh Zhenze dried black bean curd etc. It has a salty flavour. The characteristic of this tea is rich has it various tastes and colours, it is full of regional funkiness.
The final cup of tea is green tea, which is also called modestly by local people as fresh water tea. Green tea only has tealeaves and boiling water, and this is the real tea.
Some describe Wujiang Three Cups of Tea as: first have a meal, then drink a soup and finally drink the tea; pretty much the usual eating procedure.
